It’s 9:45pm and you’re wrapping up the day, getting ready to hop in bed. Suddenly it hits you. “Oh $&%#, tomorrow is the cookie trade!” or “Oh cr*p, I was supposed to make a dessert for tomorrow!”
Before you start Googling the hours of your local food store so you can go buy some mediocre cookies that you’ll remove from the package, re-plate and pawn off as your own – I have a delicious, 4 ingredient cookie recipe that will make it seem like you spent hours prepping, but will only take 20 minutes – baking time included!
Grab the following:
1 Egg
1 Cup of Peanut Butter
1 Cup of Sugar
1/2 Cup of Chocolate Chips (Don’t have them on hand? You can omit them and still have a delish PB cookie!)

Preheat your oven to 350, then throw all of the above ingredients into a bowl. Mix until smooth, then scoop evenly onto a cookie tray. Take a fork and press each cookie down, making a large hashtag shape on top. (#delicious) Sprinkle with a little more sugar, then into the oven they go for 12-15 minutes, until golden brown. Let them cool completely before diving in, as they are quite fragile when warm.
Not only are these cookies really, really quick and simple, but they are also sinfully delicious. Like really, really delicious. Oh yeah, and they’re gluten-free. Like really, really gluten-free.
But you don’t need to tell anyone how easy they were. Wrap them up on a pretty plate and take the compliments. Your secret is really, really safe with me.
