The boyfriend and I were watching “Diners, Drive-Ins and Dives” on Food Network the other night, when we saw something magical, something we’ve never seen before… Spaghetti Pie. If it wasn’t 12:30am, we would have started making it right then and there. We’ve been thinking about said pie for days and needed to feed the craving. So while food shopping today we bought all the ingredients to try making our own. We combined a few recipes (because we swore they made it differently on the show) and it came out pretty good…
- 1 Box of Thin Spaghetti
- 1 Small Onion, Diced
- 1 Medium Red Pepper, Diced
- 1/2 cup of Black Olives, Sliced
- 3/4 cup of Button Mushrooms, Diced
- 2 tbs. Olive Oil
- 1 tbs. each of Dried Oregano & Basil
- 1 Jar of Pasta Sauce (2 if you like sauce…)
- 1 cup Ricotta Cheese
- 1/4 cup whole milk
- 1 Whole Egg + 2 Egg Whites
- 2 cups of Fat Free Shredded Mozzarella
- 1/3 cup Shredded Cheddar Cheese (Optional)
- Olive Oil Cooking Spray
- Spices to taste: Salt, Pepper, Garlic
- 13 x 9 Glass Baking Dish
- Large Mixing Bowl
Preheat oven to 375. Cook the pasta then toss with the olive oil in a large bowl. Add one jar of pasta sauce, ricotta and 1 cup of shredded mozzarella and mix. Toss the onion, olives, mushrooms and peppers into the pasta. Spray your pan with cooking spray and place the pasta mixture into the pan. In a small bowl mix the eggs and egg white with the milk. Pour evenly over the pasta. Sprinkle the top with the remaining cheese. Add the (optional) cheddar on top for color. Place in oven and bake for 25-30 mins, until the cheese is bubbly. Remove and let cool for 5 minutes before slicing and serving. If you like your pasta saucy, serve with additional sauce over top.
